Dessert.

Ah, such a beautiful sound, that word....dessert....I remember, as a kid, sometimes we'd eat dessert first.  Mum took the saying "life is short, eat dessert first" to heart.  Sometimes, mum would feed me ice cream for breakfast, just cuz she could.  I think she's always been a bit of a rebel, which is fine with me.  I'm a bit of a rebel too.

Mum and I went over to Shirley's yesterday, and had dessert.  Shirley baked for us.  She won't bake for herself, but she gets excited about making something for us.  And do we appreciate it!  This week, it was Cherry Nut Squares, a recipe she got from a family member about 45 years ago.

How about the recipe?  No fun showing you, if you can't make it yourself...

Cherry Nut Squares

  • 2 cups flour
  • 1 1/2 cups chopped walnuts or pecans
  • 2 sticks margarine or butter [I prefer butter, margarine is one molecule away from plastic]
  • 1 cup regular sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 can cherry pie filling
  • powdered sugar
Cream butter, sugar, vanilla and eggs, then mix.  Stir in flour and add chopped nuts.  Spread three quarters of the batter into an ungreased 9x13 pan.  Cover with cherry pie filling.  Top with remaining batter, dropping by spoonfuls on top, then spreading with a spoon.  Bake at 350 for 45 minutes.  Let cool, then sprinkle with powdered sugar.

Easy.  And delicious!

I'm taking things easy right now, not feeling well - not sick, just not my usual chipper self.  I've recently started using a small pair of dumbells, and I think I've overdone it.  So I'm sorry, I've been by to read your blogs, but I can't muster up the energy to comment.  I took the day off from all but washing dishes today, and read a book - just sitting quietly was just what I needed.  I may have overdone the books as well....

The more I learn about your Mum the more I want to own her..... that dessert looks awesome.... hope you perk up soon.... but sometimes our body just says it's time to rest....

I always had to eat all my dinner before I got icecream. I just stopped liking icecream Lol!! That slice looks so delicious!! Reading books is a wonderful past time, enjoy, and take care.

Oh gosh, Allie, that dessert looks so yummy...it's making my mouth water! Thanks so much for sharing the recipe. And I wish my mom would have adopted your mom's attitude...maybe I would have eaten my spinach as a kid if I could have had the dessert first! LOL!

I agree with Fiona...sometimes our bodies just NEED rest. So take it easy, put your feet up, and read to your heart's content! I've got a bunch of running to do this morning for Dee and Helen, but I'll call you later this afternoon!

I see someone else has asked my question. How much is a stick of butter? I see that a bit in American recipes, and have often wondered. The dessert looks super yum.
Have a lovely time catching up with yourself while you read books - if you read that pile we may not see you for a couple of days - or more.

Those look yummy, wish I could have sugar, makes it hard to make desserts, but I do make some things and sweeten with apples or bananas.

BTW - I emailed both posters about the butter question, then thought it might be better to answer it here --- 1 stick of butter is 1/4 pound or 125 grams!

Psst, I'd love to make those delicious looking cherry squares but how much is one stick? A half a cup or a quarter of a cup? We buy our butter by the brick - which is 2 cups worth.
